Fish and chips, a very popular take-out food of English origin, consist of battered fish, commonly Atlantic cod or haddock, and deep-fried chips. No one knows precisely where or when fish and chips came together. Potatoes arrived in Britain in the 17th century. Around this time fish warehouses sold fried fish and bread, with mention of them in Charles Dickens' novel Oliver Twist published in 1830. Fish and chips helped feed the masses during the First World War and were one of only a few foods not rationed in the Second.

A traditional recipe for fish and chips is very simple. Potatoes are placed into cold water, and mixed together with flour, baking powder, salt, and pepper. Then the mixture is stirred in the milk and egg until it gets smooth. Finally the potatoes are fried in the hot oil until they are tender. The fish is dredged in the batter, before being put in the hot oil until the fish is golden brown. Don't forget the last but crucial step: Fry the potatoes again for one to two minutes for added crispness. Traditional frying uses beef dripping or lard. However, vegetable oils, such as peanut oil (used because of its relatively high smoke point) now predominate. Fish and chips are usually served with salt, vinegar, ketchup, mayonnaise and tartar sauce. A portion of mushy peas is a popular side dish.
炸鱼和薯条的传统做法比较简单。将土豆条放入冷水中,加入面粉、发酵粉、盐和胡椒粉,再加入牛奶和鸡蛋搅拌成均匀的糊状,最后将沾满配料的土豆条放入热油里炸至松软。鱼的做法类似,两边都撒上面糊,然后放入热油里炸至金黄。最后还有关键的一步:将之前的土豆条再回锅炸1—2分钟,让它们更加酥脆。传统做法使用的是牛油或猪油,如今像花生油之类的植物油(具有相对较高的烟点)则占据了主导地位。炸鱼和薯条一般配有盐、醋、番茄酱、蛋黄酱和塔塔酱,豌豆泥也是一道经典配菜。
